Your tip for this Friday is a new way to bake your sweet potato. I wish I would have made more than I did, because they ran out too quickly! The outside gets a little crispy and the inside is tender and delicious. If you have ghee, be sure to use it! It makes this recipe scrumptious.
Sliced Baked Sweet Potato
Sweet Potato
Ghee, or clarified butter
Olive Oil
Salt and Pepper to Taste
Paprika
Pre-Heat oven to 425 degrees. Wash sweet potatoes well. Slice potato as shown (3/4 of the way down)- be sure not to slice all the way through it. Place potatoes on a silpat baking sheet, or on parchment paper on a cooking sheet. Drizzle olive oil and ghee (melted) over top, letting it soak into the cuts. Add salt, pepper and paprika. Bake for 40 min, or until a fork goes easily into the sweet potato. Remove from oven, add additional ghee if needed. Enjoy!

Chipotle and Lime Sweet Potatoes
This is a perfect summer recipe, the heat from the chipolte peppers and the zip of the lime and cilantro blend together for a mouth full of flavor. I couldn't find a gluten free adobe sauce, but I have heard they are out there. If you find one, add a comment and share!
Chipolte and Lime Sweet Potatoes
1 1/2 to 2 pounds of sweet potatoes
1 T and 2 tsp extra virgin olive oil
1/2 tsp kosher salt
1 chipolte pepper from a can of chipolte peppers in adobe sauce
2 tsp adobe sauce
1 garlic clove
1 T lime zest
1 T fresh lime juice
2 T fresh chopped cilantro
Pre-heat oven to 400 degrees.
Wash and peel sweet potatoes. Chop into slices or bits about 1-2 inches in size. Toss sweet potatoes with 1 T olive oil and sprinkle with salt. Place on a cookie sheet and bake in the oven for 30-35 min, or until fork goes into the potatoes easily. Stir potatoes once during baking.
Meanwhile, remove one chipolte pepper from the can and chop into tiny bits. Place in a large bowl. Using the sauce the chipolte pepper are in, add 2 tsp adobe sauce to the bowl. Mince garlic clove and add to the bowl. Finally, add lime zest, juice and 2 tsp olive oil. Mix all ingredients.
Once potatoes are done baking, add them to the bowl and toss with the sauce until every potato is covered. Add in cilantro and toss gently. Serve and enjoy!

Fresh Bacon Wrapped Sweet Potatoes
The other night my sister-in-law was over and we thought we would try this recipe out. The plan was to make a batch, have some, and save some for Mr. Man when he returned home. UH- not so much. They were GONE in 5 min. I did make him some more last night and he and his brother finished off 2 batches. Let's not over analyze how many carbs, fats, protein that was. . . let's just focus on the fact that they are GOOD! :) I am warning you to make these at your own risk- you cannot have just a few.
Fresh Bacon Wrapped Sweet Potatoes
Bacon (Thick cut is harder to work with)
Sweet Potatoes
Preheat oven to 350 degrees
*Peel sweet potatoes and cut into rounds, then into "fry" shapes.
*Cut bacon in half long ways and down the middle. This will give you 4 skinny pieces of bacon for every strip.
*Place foil over cookie sheet. (Be sure to use a cookie sheet that has a raised edge to catch the bacon grease).
side note: Once you have removed your sweet potatoes, let the fat cool on the foil. You can remove the foil and throw it away- it makes clean up a breeze!
*Wrap bacon around the sweet potato and place on foil. If you have extra sweet potatoes, just put them on the sheet too. Everything will cook evenly.
*Cook at 350 for 15 min. When finished cooking, broil on high for a few minutes or until the tops are crispy. (My oven took 5 min. on a high broil)
*Remove from the oven and enjoy!

Fresh Sweet Potato Fries
This is one of my go to recipes. They are so easy and delicious. When my nieces are over they love to help make and then quickly eat these. There is always a sense of pride when I can get the little ones to enjoy Paleo friendly foods.
Fresh Sweet Potato Fries (Serves 2)
1 large sweet potato
Olive Oil
Sea Salt
Paprika
Pre-Heat Oven to 400 degrees.
Peel sweet potatoes and cut into "fry" shaped pieces.
In a large Ziploc bag, place raw potatoes. Drizzle olive oil into bag, as well as sea salt (or seasoning salt), and paprika. Zip up bag and shake around till all the fries are covered generously with oil and seasonings.
Empty sweet potato fries onto a large cookie sheet. Spread them out so they lay flat and are not overlapping.
Bake for 10 min. Remove from oven and flip/turn/toss the fries on the sheet.
Return to oven and cook for 10 more min. Fries should be a little crispy on the edges and cooked throughout.
(The cooking time are approximate and will depend on the thickness of the "fries". Keep and eye on your baking and adjust times as needed)
If needed, broil on high for a few min. to get them crispier- but BE CAREFUL things can go south quickly when broiling.
Remove and enjoy!
Here are some great Paleo condiment recipes. I have tried the simple ketchup and it is delicious!
